There is a saying that I often think about: "A genius knows how to make himself easily understood without being obvious about it." This statement exemplifies chef @joel.robuchon — one of most magnificent, inspiring, humble, influential French chefs of our time. He reveled in the concept that each ingredient must taste of itself… the more simple the better… respecting each ingredient for what it is. If anyone knows how I think professionally it is in that vein: reducing what is on the plate allows the ingredients to shine. He has absolutely blazed a path for me to be able think this way — and practice this way confidently. Chef Robuchon, I am not only honored you are in my kitchen but I am grateful for your wisdom, creativity, passion and courage to break from traditions (while respecting them at the same time).
